Chicken and Soba Noodles

Made from buckwheat flour, soba noodles work perfectly as a base for both stir-fries and salads. Today we will give you a recipe for chicken soba noodles that is quick and easy to make. Here are the ingredients that you need for this recipe:

  • 2 tbsp of rice vinegar
  • 3 tbsp of soy sauce
  • 1 tbsp of sesame oilchicken soba noodles
  • 2 tbsp of ginger, freshly grated
  • 1 tsp of lime juice
  • 1 pound of boneless chicken breast
  • 2 tsp of sugar
  • 1 package of soba noodles
  • 3 cups of broccoli
  • 1 tsp of lime juice
  • 1 tsp of sesame seeds (optional)

Chicken and Soba Noodles

First of all, take a small bowl and mix together all of your wet ingredients. Pour in the rice vinegar, soy sauce, ginger, sesame oil, grated ginger and lime juice. Whisk them together until you get an even mixture.

Secondly, take a large skillet and fill it halfway with water. Place it over medium-high heat then bring the water to a boil. Add in your chicken and cook until it it’s done then set it aside for later. Once it has cooled off enough, shred it to pieces using two forks. You can put the chicken bits in a large serving bowl in the meantime.

Thirdly, take a pot and fill it with water into which you added a pinch of salt. Place it over medium heat and bring it to a boil. Cook your soba noodles following the directions on the package. During the last minutes of cooking, add your broccoli in there, too. Drain everything then rinse with cold water.

Lastly, toss in your soba noodles over the chicken bits and drizzle soy sauce on top of everything. You can also sprinkle sesame seeds if you wish, and serve everything at room temperature or cold.
