Chicken With Dijon Sauce

Adding this creamy Dijon sauce to your fried chicken will give your dish a nice kick and richness. All you need are the following simple ingredients to make it:

  • ½ tsp of kosher salt
  • 4 boneless and skinless chicken breasts, cut into halves
  • 1 tbsp of extra-virgin olive oil
  • ½ a tbsp of unsalted butter
  • 1 onion
  • 1 cup of chicken stock
  • ¼ cup of dry white wine
  • 1 tbsp of Dijon mustard
  • 1 tbsp of fresh thyme
  • 1/4 cup of heavy cream

Chicken With Dijon Sauce

First of all, take out a large cutting board and place your chicken in between sheets of white paper. Take a meat mallet and use it to pound your chicken until the meat is about ½ inch thick. Season your chicken with ½ tsp of salt on each side of it.

Take a large skillet then place it over medium heat. Coat it with both oil and butter. Once it begins simmering, add in half of your chicken. Cook for about 3 minutes, until it becomes lightly brown. Flip onto the other side and cook for 3 more minutes. Do not wait until the meat is cooked through. Transfer it onto a plate then move on to cook the rest of the chicken.

Secondly, take your chopped onion and add it to the skillet. Cook it for one minute until it softens a little. Add wine and cook some more until the liquid gets reduced to half then add the stock. Let it simmer for one more minute.

Whisk in the mustard, cream and remaining salt. Bring everything to a boil then reduce the heat and add the chicken back in the pan to your Dijon sauce. Now simmer it until the chicken is cooked through and then sprinkle with thyme.
