  • 3 garlic cloves
  • 2 large onions
  • 2 red chilies
  • 3 red peppers
  • 1 kg of sweet potatoes
  • 400 ml of coconut milk
  • 1 tsp of paprika
  • 4 tbsp of olive oil
  • Sour cream to serve

First of all, take one tablespoon of oil and then heat it up in a large frying pan. After it starts sizzling, add the chopped red onion. Cook gently for 10 minutes, until your onion softens and becomes translucent. Now, take the garlic cloves and add them in to the pan. Stir in the paprika and cook everything for a couple of minutes. The next step is to put everything in the slow cooker.

Second of all, clean your pan and return it to the stove. Heat up another tablespoon of oil and then add the peppers along with the shredded cabbage. Cook for about 5 minutes and then when they become tender, add them to the slow cooker too. Use the remaining oil to cook the sweet potatoes. You might need to work in batches to cook all of the potatoes. Once all the potatoes start turning golden around the edges, put them in the slow cooker.

The next step is to pour in the coconut milk over the potatoes, giving a stir to incorporate it. You will have to let your chili sour cream for about 5 hours. Check it from time to time.

Lastly, take our your chili and scoop it out into bowls. Add in the sour cream to decorate. If you want to, you can even add avocado slices. Now you can really call this a chili sour cream.
