Ginger Sweet and Sour Tofu

If you thought that tofu is bland, then maybe this recipe for sweet and sour tofu will make you think otherwise. Here is a step by step recipe as well as the ingredients:

  • 2 tbsp of groundnut oil
  • 250g of firm tofu
  • 1 piece of ginger
  • 200g of pak choi
  • 1 tbsp of rice vinegar
  • 1 tbsp of Shaohshing rice wine
  • 12 tsp of dried chilli flakes
  • 1 tsp of soy sauce
  • cooked jasmine rice
  • 1 tbsp of grated ginger
  • 1 tbsp of brown sugar

Ginger Sweet and Sour Tofu

First of all, gently prick a couple of holes into your tofu with the aid of a toothpick. This will make the marinade soak better into the tofu, giving it a better flavor. When you are done, cut the tofu into bite-sized cubes. Into a bowl, mix the marinade ingredients together and then toss in the tofu pieces. Set aside once you are done, letting it marinade for 15 minutes.

Secondly, heat up a skillet over high heat and then add half of the groundnut oil into it. Once it starts to smoke, add in the ginger slices for a couple of seconds. Add the pak choy leaves and stir-fry for 2 minutes. Pour a splash of water to create a little bit of steam. Once the leaves are wilted and the stems are cooked, season with salt then plate them.

Next, rinse the pan under cold water, the reheat it and add the remaining oil. Once it starts steaming, add the tofu pieces and cook for 5 to 10 minutes. Try not to break the tofu into pieces as you toss it. Brown it evenly on all sides then season with rice wine.

Lastly, add the marinade liquid and let the liquid reduce. Sprinkle with chilli flakes and toss well. Spoon out the pak choy and then your sweet and sour tofu is ready to serve.
