Ham and Egg Cups With Hash Browns

Here is a recipe for ham and egg cups with hash browns for a healthy and consistent breakfast.

  • 8 slices of deli ham
  • 4 tbsp of shredded Cheddar cheese
  • 1 scallion, thinly sliced
  • 8 eggs
  • 1/8 tsp of black pepper
Hash Browns:
  • 1 pound of potatoes
  • 1 scallion
  • ½ tsp of salt
  • ¼ tsp of black pepper
  • 1 tbsp of oil

Ham and Egg Cups With Hash Browns

First of all, preheat your oven at a temperature of 400 degrees F. Take a muffin tray and coat each cup with nonstick cooking spray, then set it aside. Take one slice of ham and then place it into each of the muffin cups. You can even place two slices to make sure that there are no holes in your ham and egg cups. Sprinkle one tablespoon of the cheese on top and about ½ of the scallions on the bottom of each cup.

Now, you can place one raw egg into each ham cup. Sprinkle everything with a dash of black pepper, then bake for 15 minutes until they are done. Carefully, remove each egg cup, using the marign of the ham to lift them up.

Hash Browns:

First of all, start by peeling the potatoes, then grating them and squeezing them to take out the water. Place them into a bowl and toss in your scallions, salt and pepper. Heat up ½ tablespoon of oil into a skillet, then place your potato mixture in the pan, flattening it up. Cook for 7 minutes, until it gains a golden brown color.

Lastly, place a dinner plate over the skillet and flip both of them over so the hash brown will come out. Place it back into the pan on the uncooked side and let it fry for 5 more minutes. Remove it from the pan and then you can cut it into wedges and serve it with your ham and egg cups.
