Homemade Papaya Ice Cream

Papaya is a sweet and exotic fruit that is perfect for summer desserts. Whether we are talking about smoothies, ice cream or fruit salads, papaya is the ideal ingredient. If you do not have any in hand, you can substitute it with some peaches or nectarines. Today we are making a delicious homemade papaya ice cream for the hot summer days. Here is what you need for it:

  • ¾ cup of white sugar
  • 1 ripe papaya
  • 2 eggs
  • 1 and ½ cup of heavy whipping cream
  • 1 lime

First of all, begin by taking the eggs and whisking them together. Add in the sugar and cream over the eggs then mix them until they combine. Now pour them in a heavy saucepan. Cook the mixture over low heat, stirring constantly. At some point you will see how it starts to thicken and cling to the spoon when you lift it. Do not bring it to a boil! Once it thickens enough, remove from the heat and then let it cool off a little. Keep an eye on it and stir it sometimes so it does not form a skin.

Secondly, take the papaya and cut it into smaller chunks. Place it into a bowl for now. Grate the skin of the lime over the papaya and then squeeze the juice on top of it. Toss this mixture into a blender and process it until it becomes a puree. Add the papaya mixture over the thickened cream and stir well to combine the two.

Lastly, pour the mixture into your ice-cream machine and process it according to the manufacturer’s instructions. You will have to let it process for a couple of hours. To scoop it out, just wet your ice cream scoop to prevent the ice-cream from sticking to it. Serve your papaya ice cream along with some whipped cream or along with a fruit salad.
