First of all, chop up your rosemary. Try to only use the leaves and then discard the stems. You will need about twenty tablespoons of chopped rosemary after it dried. Therefore, when you start working on this, take shrinkage into account.
The next step is to lay out all of the rosemary onto a cutting board and leave it to dry overnight. In a glass jar, place six tablespoons of the dried rosemary. Cover it with 1 and ¼ cups of virgin olive oil. Set it on a sunny windowsill for the next two days. Remember to give it a shake every 12 hours.

Take another 6 tablespoons of rosemary and then place them in an empty jar. Cover the mouth of it with muslin. Now pour the contents of the first glass into this one. Make sure to be careful so that the oil can filter properly into the second jar. The rosemary pieces will be caught by the muslin. Squeeze it a couple of times to get out as much oil as you can.
Cover the jar tightly and place it on the windowsill again for the next 48 hours. Just like the last time, give it a shake every 12 hours. Strain the oil a final time and then you can store it in a cool and dark place.
