Mexican Ropa Vieja

In order to make this Mexican Ropa Vieja you will need the following ingredients:

  • 1 chopped onion
  • 2 tbs of cooking oil
  • 5 cloves of garlic, chopped beforehand
  • 1 sweet red pepper and 1 green pepper, both chopped
  • ½ cup of beef broth
  • ½ tbs of cumin and ½ tbs of oregano
  • 2 pounds of beef flank steak
  • 2 tbs of fresh cilantro
  • 16 flour tortillas
  • 1 cup of corn kernels

Mexican Ropa Vieja

Firstly, heat your oil into a large heat-proof casserole over medium heat. Now you can begin adding your red and green peppers together with the garlic and onion. Cook everything until the onions turn translucent and your peppers are softened. This should take approximately 8 minutes.

To your vegetable mixture, add in the cumin and oregano and cook everything for about one more minute. Now you can add your tomatoes and the beef broth. Take your steak and season it with both salt and pepper, then add it to the pot. Cover everything then bring it to a simmer.

Let it sit on medium heat for about two hours until the meat becomes tender. Check the pot from time to time and turn the meat occasionally so it cooks evenly. Remove the meat form the broth and let it cool a little. Slice it into two pieces then shred it into pieces.

Into the remaining broth from the pot, add your corn and green chiles and let it boil for 5 more minutes. Add in the shredded meat, jalapeno and cilantro and boil for 5 more minutes. Take your tortillas then fill them up with the warm mixture from the pot.

Now you have your Mexican Ropa Vieja ready to eat, and it’s enough to serve about 8 people. Make sure to serve it when warm!
