Rhubarb and Star Anise Sorbet

The following recipe will teach you how to make a stunning homemade sorbet of a striking pink color. By using this vibrant and sweet red rhubarb you will enhance the color of the dessert even more. Add a nip of vodka if you want to make this dessert a little bit more adult.rhubarb sorbet

  • 700g of thin forced rhubarb
  • 140g of golden caster sugar
  • 2 star anise
  • 1 vanilla pod
  • 3 tbsp of liquid glucose
  • juice from one lemon
  • 1 tbsp of vodka

Rhubarb and Star Anise Sorbet

First of all, begin by taking the rhubarb and placing it into a saucepan. Pour the sugar on top of it, covering everything with 75ml of water and the liquid glucose. Before putting in the vanilla pod, make sure to scrape the seeds out from it, then add them into the pan along with the pod. Throw in the star anise too.

Second of all, place the pot over medium-high heat and then bring it to a boil. Give it a stir from time to time. Reduce the heat and then continue cooking for about 15 minutes. By that point, the sugar should have completely dissolved and the fruit is soft and starting to break down. Now it is about time to remove the pot from the heat and take out the vanilla pod and star anise. Take the rest of the mixture and pour it into a blender, processing it until it’s smooth.

Lastly, pour the mixture through a fine strainer, making sure to remove the stringy bits of rhubarb that are left. Transfer to a jug, then stir in the vodka and lemon juice. Cover the jug and then put it in the fridge until it chills completely. Afterwards, put it into an ice-cream machine, following the manufacturer’s instructions. Freeze for 3 hours and then it’s ready to serve.
