Roast Beef And Caramelised Onion Recipe

The ultimate centerpiece to any meal is definitely the roast. To make this dish even more amazing, we have a caramelised onion recipe to go alongside it.

  • 1 tbsp of dried thyme
  • 1 tbsp of black peppercorn
  • 2kg of topside joint of beef
  • 1 tsp of celery seedsoast beef with caramelised onion
  • 2 tbsp of olive oil
  • 1 tbsp of English mustard powder

For the gravy

  • 4 tbsp of plain flour
  • 2 beef stock cubes
  • 3 tbsp of caramelised onion chutney
  • 2-3 tsp of Marmite

First of all, crush the black peppercorn along with the celery seeds, thyme and mustard powder. Throw in a pinch of salt, then grind everything together using the mortar and pestle. Add in the oil, and then you can start rubbing the mixture all over the beef. If you have enough time, cover the meat and let it marinate overnight.

Secondly, heat up the oven to 190 degrees C, then put the beef into a tin and place it in the oven. Roast it 55 minutes if you want it medium rare or about one hour and 10 minutes for a medium well. Once the time is up, remove the roast from the oven, place it onto a platter, cover it with foil, then let it rest for 30 minutes.

Next, to make the gravy, take the juices from the roasting pan and pour them into a jug. Let the juices separate and then use 2 tablespoons of fat for the tin. If you don’t have any, just use butter instead. Place the roasting tin in the hob, then add the stock cubes, flour, onion chutney and Marmite. Let them cook for one minute, stirring well, then add 750ml of hot water. Let it bubble until it thickens.

Lastly, serve the beef slices along with the warm gravy.
