Lemon and Rosemary Iced Tea

Most of you probably read the title and are now either curious or just downright outraged at the idea. I mean, lemon tea is quite common. But rosemary? Can one even make rosemary iced tea? Well, yes, of course they can. And it also tastes exquisite if you know how to prepare it. Rosemary provides a hint of flavor to an otherwise sweet drink and makes the lemon stand out more.

You can use this recipe to make any type of tea that you like. Therefore, get creative and adjust the recipe to your liking.

What you need to do is make a simple syrup by using equal parts of sugar and water. Afterwards, you will infuse it with lemon peel and rosemary sprigs. We will keep it as simple as possible to let the lemon stand out. Boil the syrup well to ensure there are no gritty bits when you drink it.

First of all, start by slicing off some of the lemon peel. Now, add in 1 and ½ cups of water into a small saucepan, pouring in the same amount of sugar. Stir to combine and bring it to a boil. Put in the lemon peel along with some rosemary sprigs and continue boiling. When the sugar dissolves and the liquid is clear, you can turn off the heat. Now pour the sugar syrup into a container and let it cool off.

Now, take out a couple of teabags (around 5-6 of them). Place them at the bottom of a pitcher and then pour about 6 cups of hot water over them. Let everything steep for 5 minutes and then remove the tea bags. You can also boil your tea bags directly inside the water. Whatever you prefer.

Now all that you have to do is to pour your rosemary syrup through the strainer and into the pitcher. Add 2-3 cups of cold water and then stir to combine. And there you have it, a refreshing rosemary tea just for you.
