Scallops With Asparagus Salad

The scallops provide a simple and impressive accompaniment to your asparagus salad. Make a simple spring meal with only the following ingredients:

Scallops with asparagus

  • 1 tsp of Dijon mustard
  • 1 tbsp of apple cider vinegar
  • 4 tbsp of olive oil
  • 1 minced shallot
  • 1 pound of asparagus
  • ½ tsp of salt
  • ½ tsp of black pepper
  • 1 pound of new potatoes
  • 1 and ½ pounds of scallops
  • 10 cups of salad greens
  • 1 tbsp of butter

Scallops With Asparagus Salad

First of all, take a small bowl and whisk in your shallots, mustard and apple cider vinegar. Drizzle in 3 tablespoons of olive oil, whisking constantly until all of it is incorporated. When you are done, set it aside for a later use. Bring a pot filled with water over medium heat, then add your potatoes and cook them for 5 minutes. Drain them of water and set them aside too.

Secondly, take a large skillet and heat up the remaining tablespoon of oil in it. Add your potato slices to the skillet and cook them for 4 minutes, giving them a stir form time to time. Add in your chopped asparagus and sprinkle everything with salt and pepper. Let them simmer for another 5 minutes then remove the mixture and plate it.

Now, it’s time to start cooking the scallops for your asparagus salad. Season them with salt and pepper and put them to cook in the skillet. Throw in half of your butter, swirling everything inside to incorporate it properly. Cook for 2 minutes on each side, adjusting heat as necessary.

Lastly, toss your salad greens with 2 tablespoons of dressing and divide it among plates. Add the asparagus mixture, along with the scallops onto the plates. Give everything a couple of stirs and now your asparagus salad is ready to serve.
