Smoked Chicken Strata

A nice, smoked chicken casserole makes for a delicious family meal. This is definitely going to be your family’s new favorite dish. Here are the ingredients that you need for the recipe as well as how you can make it:

  • 2 cups of fresh asparagus or chopped broccoli
  • 1 tbsp of canola oil
  • ½ cup of chopped yellow or red pepper
  • ½ cup of sliced mushrooms
  • 3 whole grain muffins, torn into small pieces
  • nonstick cooking spray
  • ¾ cup of shredded Swiss cheese
  • 2 cups of shredded smoked chicken breast
  • 1/8 tsp of black pepper
  • 4 eggs, lightly beaten
  • 1 cup of fat free mill


Smoked Chicken Strata

First of all, you will need a large skillet that you will place on the stove on medium heat. To it you will ad your mushrooms, asparagus and red or yellow pepper. Cook all of your vegetables for about 3 minutes until they become crisp and tender.

Here you can opt whether you want to have one big casserole or several smaller ones. If you opt for the latter, then take out six casseroles and coat them with cooking spray. From here, evenly divide half of the English muffin crumbs in between all of your casseroles. Top everything with the chicken bits and vegetable mixture. Add half of the quantity of Swiss cheese and top everything with the remaining muffin bits.

Secondly, take a bowl and whisk in the milk, eggs and black pepper. With this mixture, go to your casseroles and pour it over each dish. You can opt to cover everything with some more muffin bits if you still have some around. When done, cover everything and let your smoked chicken strata chill for up to 3 hours.

Lastly, preheat your oven to 325 degrees F. Bake your casseroles without covering them for about half an hour. Let everything cool for 10 minutes before serving.
